Description

 

The fish:

The wild ones can be found in the Caspian Sea. The species  normally mature in the 15th ~ 20th year, and can live up to 100 years and reach over 1000kg. The scientific name is Huso huso. This precious species is the biggest sturgeon.

 

The caviar:

It is produced from roes of mature beluga of over 15 years of aquaculture. Its color can be pearl grey ,or dark grey. The roes are smooth and even ,with a special sheen .Its diameter is over 3 mm. It has a full-bodied flavor with a special aromatic after taste.
 

Beluga Caviar Specification:

The grains of Beluga Caviar are the largest roes and range in size from 3 to 3/7 and in color, from light gray to dark gray and even polished black. 

Despite the grading on the base of size, color and consistency, Beluga Caviar is generally the most delicate of all sturgeon caviar, presenting a very mild and buttery elegant flavored reminding the calmness of oceans.

Common Beluga Caviar

Size under 3 mm

Imperial Beluga Caviar:

Size 3.1-3.2 mm

Imperial Selection Beluga Caviar (ISBC):

Size above 3.2 mm

When ISBC roll over the tongue and pop up, the differentiation appears!

Selected by professional experts (as mentioned in the trade name) in the procedure by certain frameworks: color spectrum (light gray) size, consistency and stability which lead to production of the most pleasant one.
